1)180g egg yolks 80gsugar
2)200g egg white 120g sugar salt,lemon juice
3)150g soft flour
filling
1/2 orange zest
500g cream
50g cream stabiliser
20g grand Marnier
20g orange juice
method
-Whisk the yolks ans sugar to thick sabayon
-Whisk the whites and sugar (salt, lemon juice) to firm peaks.
-Beat a small amount of sabayon into meringue and continue gently folding the sabayon into the maringue.
-Fold the sifted flour into the above mixture.
-Spread the batter evenly onto a paper lined baking tray using a step palette knife.
-Bake in a hot oven; when baked, remove from the baking tray and turn immediately onto another paper, sprinkled with sugar.
-When cooled, spread the cream filling, roll up and chill in the fridge.
