烤三文鱼配蜂蜜柠檬酱釉,新鲜芦笋配Poached eggs & Hollandaise Sauce(荷兰汁),Poached eggs- 2 free range eggs,
- 1/2 tablespoon white vinegar
Hollandais sauce- 2 egg yolks
- 1/2 tablespoon lemon juice
- A pinch of Salt and white pepper
- 100g butter, melted and warm
Poached Egg:Break the eggs into small cups . Pour plenty of water into a frying pan and add the vinegar at medium heat.
When the water are very little bubbles on the pan, you can put the egg into the water. You must leave plenty of room to be able to lift them out with the spoon. The eggs take about 2 or 3 minutes to cook and please do not over cook the eggs.
It is best to spray the spoon with little oil which allows the cooked egg to slip off easily.
Hollandaise Sauce:
Putting the egg yolks only, lemon juice, salt and white pepper into the bowl or food processor — whisk for 30 or 60 seconds and then slowly pour in the warmed melted butter. whisk untill smooth sauce,and don't forget to taste for seasoning
Top the eggs on asparagus with the sauce and serve immediately. Yummy
注意:鸡蛋一定要用Free Range Eggs,因为它的颜色是很鲜艳的黄颜色。
Bake Salmon: 1/2 cup maple syrup 1/4 cup light soy sauce
2 Salmon filet
1/4 teaspoon black pepper & salt 1 tea spoon fresh lemon juice for per filet
20g Butter or 1/4 cup Olive oil for each salmon filet
Marinade the salmon filets with the maple syrup and soy sauce into a plastic re-sealable bag & seal the bag tightly, then Refrigerate a minimum of 4 hours or 1 day, turning salmon frequently.
Preheat oven 180C. Remove salmon from marinade and spread the butter or Olive oil on both sides's salmon,lemon juice, salt & pepper. Place salmon onto a large piece of aluminum foil & folded into like a bag, thenput onto preheat Cook approximately 20 or 30 minutes depend on the size of your salmon.非常好吃,又简单容易,有问题请问,我会很快回复,谢谢观看
