我就是用icing sugar裱的阿,但是结果还是一塌糊涂。。。。我对自己也无语了。。。。
戚风蛋糕想都不敢想 ...
戚风卷真的不难~
我卷的不是特别好看,跟商店里的瑞士卷没法比,中餐我做的还可以,蛋糕孩子学!不过老公一般都说是他在路上弄的哈哈 给我留面子~~
我用的这个recipe, 很简单,你试试~ 主要就是记得戚风要烤熟,这种扁扁的蛋糕熟的比较快,不怕不均匀。然后熟了之后倒扣放凉,就好了。baking tray一定要line好。
Chiffon Roll
Ingredients (a roll of 15)
4 eggs
80g sugar
50 ml milk
3 TB of liquid vegetable oil
1 TB of Rum or other liquor
80g cake flour
half T of baking powder
1 T of lemon juice or vinegar
Filling
half cup of heavy whipping cream
1-1/2 TB of confectioner’s sugar
1/3~1/2 cup of chopped strawberries.
Utensils
sieve, hand mixer, parchment paper, 9”x13” cookie pan, rolling pin, spatula.
Procedure
1. Separate egg yolks and egg whites; sift cake flour and baking powder together; preheat oven at 180 C/ 350 F. Line the cookie pan with a piece of parchment paper (cut the four edges to shape the angles of the corner, refers to P1).
2. In a large mixing bowl, whisk egg yolks with half of the sugar, and then add vegetable oil and milk till well blended. Add flour and baking powder and mix with a spatula.
3. Beat egg whites with lemon juice in a clean and oil-free mixing bowl, add the other half of sugar in small portions and beat until fluffy and can form a soft peak.
4. Mix batter with 1/3 of egg white foam, and then pour the mixture into the remaining egg white foam. Mix well, and then pour into the pan, smooth the surface, bake for 12~13 minutes. At the mean time, whip heavy cream with confectioner’s sugar till firm, and then stir in chopped strawberries, cover and transfer to refrigerator to keep cool.
5. Turn the cake upside down and let cool in another piece of parchment paper (P2). After it’s completely cool, tear off the parchment paper (the one lined in the pan while baking: P1), turn to the clean side and line on the bottom of the cake; turn the paper and the cake upside down and remove the paper on top (P2). Spread the filling on top and wrap with parchment paper (P1) to make a roll. (may use a rolling pin behind the roll to help form a nice shape.)
6. Adjust the roll to have the opening in the bottom (to help sealing it) and transfer to refrigerator for 30 minutes, and then may remove the parchment paper (P1). Now it's re ready to be cut and served.
