最后一节考试课,我们5人组的努力成果,食物很容易做的!~~~
其中一节课上,学做的LAMB SHANKS。。这个时间做的比较久,最少要煮2-3个小时,比较复杂点``
Ingredients:
Lamb shanks 6 (for six people)
Oil 80ml
Flour(seasoned) 100g
Garlic(pasted) 5 cloves
Carrot(peeled) 4
Onion(peeled) 2
Celery stalk(washed) 4
Thyme 2 springs
Bay leaf 2 leaves
Red wine 300ml
Tomato Puree 90g
Demi Glace 300ml
Salt & Pepper pinch
Cooking method:
-Preheat oven to 170 degree.
-Cut the fat from lamb shanks
-Get 60g flour, salt & pepper, flour the shanks
-Heat 80ml oil in a fry pan, then brown shanks evenly in the pan
-Heat 35ml oil in a Dutch oven, brown the chopped vegetables, thy,e and bay leaf
-Place lamb shanks on top and add hot wine, brown stock, puree, demi-glace, salt and pepper
-Bring to the oven for approx 2 hours, basting every 30 mins and remove shanks.
-Use a chinois to skim fat from the sauce.
-Reduce the sauce to a coating consistency.
-Put shanks back into sauce to reheat.
-Garnish with 2tbsp parsley.
