Don't ever use quick dry rdy mix on structural / load bearing/ grouting. DIE HARD, they crack like hell.

Brick layer should have left behind some spare brick somewhere, (its their normal practice, if not please ASK)

From your description $300 all up would be a bit thin,   I can alter your design a bit and make it happen.
