请问为什么我烤的布朗尼发不起来,烤完后完全没有那种松软的texture,感觉像蒸熟了似的。也不是每次都会这样,偶尔有发生这么奇怪的现象,我有加baking powder很诧异啊,方子是一样的呀,是不是不可以在baking paper上 spray oil呢?今天还烤了个lemon yogurt cake, 用的是自发粉也是个面坨,请经验的朋友们指点一下,谢谢。

是的,可以喷SPRAY,你要检查一下你的OVEN 有没有问题,还有所有材料是否正确,如果都没有问题,可能是RECIPE不好吧

我烤的中间也会有点塌  你有经常打开烤箱看吗

我觉得烤箱的问题吧?或者换个配方试一试。

做brownie的时候鸡蛋不能打得太厉害。
我有一个屡试不爽的lemon yogurt cake,需要的话可以发给你。

raspberry brownie

Ingredients320g
butter, melted
1 1/4 cups cocoa
7 eggs
3 cups sugar
1 tsp vanilla essence
1 1/2 - 2 cups chocolate chips/drops (dark is best)
1 1/4 cups plain flour
1 tsp baking powder
Frozen/fresh raspberries (optional)
Icing sugar (optional)

Directions

Preheat oven to 160C.
Line a large baking tin/roasting dish (I use a 24x34cm rectangle dish)
Melt the butter in a large bowl (there's lots of ingredients to fit in here) in the microwave, or in a large saucepan on the stove.
Using an electric mixer, beat cocoa into melted butter.
Add eggs, sugar, and vanilla, and whiz with electric mixer for 3-4 mins until the mixture begins to whip up in volume (about double).
Using a wooden spoon/rubber spatula, mix in the chocolate chips/drops.
Sift flour and baking powder in; stir until fully combined.
Pour into lined baking tin; give it a gentle shake to even out the mixture.
If using raspberries, dot these evenly on top of the mixture, gently pushing them just under the surface.
Bake in oven at 160C for about 1 hour, until an inserted skewer comes clean.
Leave to cool in tin for about 10 mins, then turn out onto a wire rack to cool further.
If you want to make them look extra fancy, sift icing sugar over the top.
Enjoy warm, cold, with some whipped cream, with some hot coffee, or even with a sneaky wine!

这是个很light的lemon cake,很想海绵蛋糕,我一般放半杯油,再多加一杯酸奶在里面,做出来的就特别松软。

Ingredients
1 3/4 cups sugar.
Rind of two lemons (peeled with potatoe peeler)
2 eggs
1 cup of oil (not olive, just your favourite cooking oil)
1 cup yoghurt (I use my own homemade , unsweetened plain)
3 tablespoons lemon juice
2 cups self raising flour
1/2 tsp salt

Directions
Heat oven to 180 degrees Celcius.
Tip sugar and lemon rind into the processor. Blend for 30 secs until lemon is chopped finely.
Add eggs, oil and salt.
Process 30 secs
Add yoghurt and lemon juice, process 30 secs
Add flour, pulse to blend.
(the mixture is quite liquid)
Butter and flour a ring tin 23 c.m. dimater.
Pour mixture into tin.
Place in middle of oven, for 30 mins.
Cool in tin.
Serve dusted with icing sugar and with whipped cream/yoghurt combination.

这个你要是做成muffin也很好吃 烤的时间短点就行哈~

你烤得是巧克力brownie还是巧克力海绵蛋糕?brownie是不需要发很多的,发起来的话就变成sponge了。洋人大brownie都是很dense的。
